Cashew Chicken Chow Mein Casserole
I made this twice now, first time very salty second time after a few adjustments very good-I of course used a little more cashews less chicken and didnt use celery-I had trouble finding the rice chow mein noodles, because they are in a little can smaller than the regular sized chow mein noodles...
Cashew Chicken Chow Mein Casserole
2 1/2 pounds cooked chicken cut into bite size pieces
1 bunch celery, blanched and cut into 1/4 inch slices
1 can (8 oz) water chestnuts, drained
1 can (10.75 oz) cream of chicken soup, undiluted
1 cup chicken broth
1 tablespoon soy sauce
1/2 teaspoon pepper
6 oz cashews
1 can (3 oz) rice chow mein noodles
Preheat oven to 350 F. Coat a 9x13 inch baking dish with cooking spray. Combine chicken, celery, water chestnuts, soup, broth, soy sauce and pepper in baking dish and stir until combined. Top with cashews.
Bake fro 30 minutes. Remove from oven, top with noodles and return to oven, bake for 10 minutes more. Serve immediately over rice.

Strawberry Chiffon Dessert
Tomorrow is Easter lunch at my parents house...I am going to make the dessert (and taco dip, yum!) I have made this before and it is a big hit (and super easy to make!)
Strawberry Chiffon Dessert
1 1/2 cups crushed graham crackers-about 24 squares (I use the boxed crumbs)
1/3 cup sugar
1/2 cup butter or margarine, melted
Filling:
1 pkg. (3 oz) strawberry jello
1 cup boiling water
2 pkgs. (one 8 oz, one 3 oz) cream cheese, softened
1 cup sugar
1 teaspoon vanilla extract
1 carton (16 oz) frozen whipped topping, thawed
Combine the first three ingredients; set aside 2 tablespoons for topping. Press remaining crumbs onto the bottom of an ungreased 9x13 inch baking dish; set aside. In a bowl, dissolve jello in boiling water; cool. In a mixing bowl, beat cream cheese and sugar. Add vanilla; mix well. Slowly add jello until combined. Fold in whipped topping. Spoon over crust; sprinkle with reserved crumbs. Cover and refrigerate for 3 hours or until set. Yield: 12-15 servings.

SUPER EASY CHICKEN (crock pot)
4 frozen chicken breasts
1 package dry italian dressing mix
1 cup warm water with chicken bouillon or chicken broth
Place chicken in slow cooker, sprinkle with dressing mix. Pour stock over chicken. Cover, cook on low 8-10 hours. Serve over noodles.
