Noodles birthday coupon
Since my birthday is coming up next week, I received my Noodles and Company coupon today, it is for a free dish! mmm, pasta fresca with parmesan cheese here we come!
What's for dinner 3/11/09
We love mexican food, and if I can find a one dish recipe I am a happy camper, it is also a good way to use up the tortilla chip crumbs..here is a family favorite:
Mexican Casserole
oil for frying
3/4 pound cubed skinless, boneless chicken breast meat (or use 1 pound ground chuck-don't use oil for frying)
1/2 onion
1 garlic clove
3 tablespoons taco seasoning or 1 package taco seasoning mix
1 (15 oz) can black beans
1 (8.75 oz) can sweet corn, drain 1/2 can
1/2 cup salsa
1 cup shredded mexican style cheese
1 1/2 cups crushed plain tortilla chips
In a large skillet over medium heat, saute chicken, onion, and garlic in oil until cooked through and no longer pink inside. Add taco seasoning, beans, corn and salsa. Cover skillet and simmer over medium low heat for 10 minutes. Preheat oven to 350 degrees. Transfer chicken mixture to a 9x13 inch baking dish, top with 1/2 of the cheese and crushed tortilla chips. Bake in preheated oven for 15 minutes. Add remaining 1/2 cup cheese and bake until cheese is melted and bubbly.

Shopko Express in our area is doubling coupons from March 14-20th up to a $2 coupon, NO limits on how many coupons you can use!!
I have not stepped foot in this store in a few years, so I will head over there sometime today to check out their prices and products...very exciting though, maybe other stores will get the hint and start doubling too?!!?

Pick N Save 3/11/09
Every Wednesday is double coupon day at Pick N Save (there are no other stores in our area that doubles coupons). I had my list done for the last day now, I was ready to go! I got to the store around 6:30 am (if you get there later in the day everything is cleaned off the shelves). There was a deal this week if you spend $25 in Proctor and Gamble selected products you get $5 off of your next order-a catalina should have printed with your receipt, then I was going to use that $5 toward my next transaction. I had 5 transactions planned out. NONE of them worked out the way I thought they would.
First, this store is so inconsistent with the way stuff rings up. You can only double 5 coupons and you have to spend $25 to get them doubled, that is $25 before all of the sales...example, the Iams cat food was on sale for $7.99, but when it is scanned through it rings up as the original price of $8.99. Then you give them your store card, that takes the sale off, they scan your coupons, etc...well some of their "sale" prices ring up as that price, not the original price...so I added everything up wrong at home because I didn't know the sale price would ring up.
Second, the $5 catalina was not printing, so thankfully my cashier was friendly and very patient! She would just hand me a $5 bill after I spent my $25 worth of P&G products.
Anyways, here is the list of everything I got I did pretty good but didn't get a lot of food items-we didn't really need much but I did put some stuff back because of the mess with the transactions I had more coupons and they would not be doubled, oh well I learned...

I went to Target tonight to pick up some apple sauce and to use the Nature's Source cleaners coupons...I was delighted to find they had the Nature's Source on CLEARANCE for $2.23, after the Target $1 coupon and my $1 manufacturers coupon I paid $0.23!!!
So 4 of the cleaners at $0.23 each and 2 Motts apple sauce for $0.11 each, I am not complaining!!

What's for dinner 3/8/09
Tacos tonight! I have a great recipe for homemade taco seasoning, I love the fact that it doesnt have all those preservatives and sodium like the packaged ones...we use this all the time for recipes.
Taco Seasoning
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1/2 teaspoon sea salt
1 teaspoon black pepper
In a small bowl, mix all spices together. Store in an airtight container.
To use: Use 3 tablespoons for 1 pound of meat. Add 2/3 cup water and cook until water is absorbed.

Also the Target brand Market Pantry has their soups on sale I have seen for $0.54, but I picked up 8 cans of cream of mushroom for $0.45 each can on clearance-print the coupon from the above link that is $0.50 off of two MP soups and you are getting the cans for $0.20 each (if you can find them on clearance!).

What's for dinner?
Well, tonight actually it is leftovers. But it is soooo good! Thank you to my sister in law Elizabeth for giving me this recipe, I love simple, yummy, one dish dinners! I am sure we will be having this a lot since I have 3 bags of brown rice to use...
Chicken And Rice Casserole
1 can cream of chicken
1/2 cup milk
1/2 teaspoon salt
1/3 cup mayo
2 cups chopped cooked chicken (I used 1 large can of chicken)
10 oz. frozen broccoli
2 cups cooked rice
1 cup shredded cheddar cheese
seasoned bread crumbs
1 tablespoon melted butter
Preheat oven to 350 degrees. Blend soup, milk, salt and mayo in a bowl. Combine chicken, broccoli and rice to soup mixture. Fold in half of the cheese. Spray a 9x13 inch pan with cooking spray. Spoon in chicken mixture. Sprinkle with remaining cheese, sprinkle bread crumbs, and drizzle with melted butter. Bake until top is golden brown, about 25 minutes.

Of all places I found a bunch of coupons at the local Citgo gas station that say buy any 20 oz coke get $1.00 off of any reeses product. These should be a good filler for my Pick N Save trips on double coupon day since they double the whole amount, no adjusting here!
