Spring Noodle Bowl

I found this recipe in a magazine under the low fat menus. I tried it tonight with a few modifications-it called for almonds and scallions, which I didn't have so I used cashews and red onion. I thought this was a great make again, SIMPLE, low fat meal!

2 teaspoons sesame oil
2 cloves garlic, minced
8 asparagus spears, cut into 1 inch pieces
red onion, cut into 1 inch pieces
1/3 cup frozen baby green peas
2 cups cooked pasta
1/2 cup cashews

Warm oil in skillet. Saute garlic and vegetables for 8 minutes. Top pasta with cooked vegetables and cashews.

Cole Slaw

I have this thing for KFC cole slaw, so when I got this recipe and was told it tastes just like it I had to try it for myself. Thanks to Nancy for the recipe, this is SO easy, you are supposed to chill it but of course I couldn't wait that long!

Cole Slaw

8 cups cole slaw (I used 1 bag) run a knife through it until it is very small
1/4 cup carrot, shredded small (the bag had carrots so I didn't use these)
2 tablespoons onion, cut very small (didn't have onion)
mix the above

stir the next ingredients:
1/3 cup sugar
salt and pepper to taste
1/2 cup mayo
1/4 cup buttermilk (or use 1/4 cup milk, 1 teaspoon vinegar)
1 1/2 tablespoons white vinegar
2 1/2 tablespoons lemon juice

Pour over the slaw and refrigerate for a few hours or overnight.

Whats for dinner? 5/21/09

This is a great way to use all of the zucchini that grows all summer-that we always seem to get a ton of, oh and hubby is NOT a fan of veggies, he eats this no problem! The recipe says to shred the carrot, I just chop it into small pieces. And I have been using low sodium stuffing which tastes just as good.

Zucchini Casserole

6 cups diced zucchini
1/4 cup onion, chopped
1 cup shredded carrot
1 cup lowfat sour cream
1 can cream of chicken soup
1 cup salted water
1 pound ground chuck, browned
1/4 cup melted butter
1 (8 oz) package stove top stuffing

Bring salted water to a boil, cook zucchini, onion and carrot in simmering water for 5 minutes. Drain, combine undiluted soup, sour cream and ground chuck. Fold into veggie mixture. Pour melted butter into 1/2 of stuffing mix (plus seasonings from stove top mix) and spread in a 9x9 inch pan. Spread ground chuck mixture over stuffing mix. Sprinkle remaining stove top over this. Bake at 350 F for 25-30 minutes.

Went to Target last night and got the following:

I used my 2 free Right Guard coupons, the printable coupons from Kraft that were recently printed doubled with the Target coupons, and the cottonelle was on clearance as is because they got the wrong stuff, they didnt have this kind in their system so the only thing they could do was mark it from $4-something to $2.56-I had a $1 manufacturers coup and doubled that with a $1 target coup...

total savings and coupons tendered: $20.48

oop total: $4.30

making this a total savings of: 82.65% !!!

I am NOT a meatloaf fan at all, but my hubby is a meat and potatoes man...I can compromise with these, I have made these many times and they are delicious! I usually make the Italian flavored ones with cheddar cheese:

Marvelous Mini Meatloves

1 pound lean ground beef
1 package (6 oz) stove top stuffing mix
1 cup water

mix and match your recipe from these options:

Italian: use 1 tsp Italian seasoning, 3/4 cup spaghetti sauce, 3/4 cup shredded mozarella cheese

Fiesta: use 2 tsp chili powder, 3/4 cup chunky salsa, 3/4 cup shredded mexican cheese

Mediterranean: use 1 tsp dried oregano leaves, 3/4 cup chopped roasted red peppers. 3/4 cup crumbled feta cheese

BBQ: 1 tsp garlic powder, 3/4 cup barbecue sauce, 3/4 cup shredded cheddar cheese

Preheat oven to 375 F. Mix meat, stuffing mix, 1 cup water and seasoning of your choice until well blended. Press into 12 muffin cups sprayed generously with cooking spray; make an indentation in the center of each with a spoon.

Spoon add ins into center of each meat loaf. Bake 30 minutes or until meatloaves are cooked through. Top with cheese; continue baking 5 minutes or until cheese is melted.
