What's for dinner?

Well, tonight actually it is leftovers. But it is soooo good! Thank you to my sister in law Elizabeth for giving me this recipe, I love simple, yummy, one dish dinners! I am sure we will be having this a lot since I have 3 bags of brown rice to use...

Chicken And Rice Casserole

1 can cream of chicken
1/2 cup milk
1/2 teaspoon salt
1/3 cup mayo
2 cups chopped cooked chicken (I used 1 large can of chicken)
10 oz. frozen broccoli
2 cups cooked rice
1 cup shredded cheddar cheese
seasoned bread crumbs
1 tablespoon melted butter

Preheat oven to 350 degrees. Blend soup, milk, salt and mayo in a bowl. Combine chicken, broccoli and rice to soup mixture. Fold in half of the cheese. Spray a 9x13 inch pan with cooking spray. Spoon in chicken mixture. Sprinkle with remaining cheese, sprinkle bread crumbs, and drizzle with melted butter. Bake until top is golden brown, about 25 minutes.
