We love mexican food, and if I can find a one dish recipe I am a happy camper, it is also a good way to use up the tortilla chip crumbs..here is a family favorite:
Mexican Casserole
oil for frying
3/4 pound cubed skinless, boneless chicken breast meat (or use 1 pound ground chuck-don't use oil for frying)
1/2 onion
1 garlic clove
3 tablespoons taco seasoning or 1 package taco seasoning mix
1 (15 oz) can black beans
1 (8.75 oz) can sweet corn, drain 1/2 can
1/2 cup salsa
1 cup shredded mexican style cheese
1 1/2 cups crushed plain tortilla chips
In a large skillet over medium heat, saute chicken, onion, and garlic in oil until cooked through and no longer pink inside. Add taco seasoning, beans, corn and salsa. Cover skillet and simmer over medium low heat for 10 minutes. Preheat oven to 350 degrees. Transfer chicken mixture to a 9x13 inch baking dish, top with 1/2 of the cheese and crushed tortilla chips. Bake in preheated oven for 15 minutes. Add remaining 1/2 cup cheese and bake until cheese is melted and bubbly.
