Whats for dinner 5/09/09

I am NOT a meatloaf fan at all, but my hubby is a meat and potatoes man...I can compromise with these, I have made these many times and they are delicious! I usually make the Italian flavored ones with cheddar cheese:

Marvelous Mini Meatloves

1 pound lean ground beef
1 package (6 oz) stove top stuffing mix
1 cup water

mix and match your recipe from these options:

Italian: use 1 tsp Italian seasoning, 3/4 cup spaghetti sauce, 3/4 cup shredded mozarella cheese

Fiesta: use 2 tsp chili powder, 3/4 cup chunky salsa, 3/4 cup shredded mexican cheese

Mediterranean: use 1 tsp dried oregano leaves, 3/4 cup chopped roasted red peppers. 3/4 cup crumbled feta cheese

BBQ: 1 tsp garlic powder, 3/4 cup barbecue sauce, 3/4 cup shredded cheddar cheese

Preheat oven to 375 F. Mix meat, stuffing mix, 1 cup water and seasoning of your choice until well blended. Press into 12 muffin cups sprayed generously with cooking spray; make an indentation in the center of each with a spoon.

Spoon add ins into center of each meat loaf. Bake 30 minutes or until meatloaves are cooked through. Top with cheese; continue baking 5 minutes or until cheese is melted.
